Mixed Vegetable Curry

Vegetables:
1 med. potato (cut into small cubes)
1 med. carrot (cut into small cubes)
1/2cup cooked green peas
10 pcs. frencg beans (cut into small pc)
(you can add paneer cubes, cauliflower)
Ingredients:
1 onion coarsely ground
2 tomatoes (chopped very fine)
2 chillies slit
½ tsp garlic paste
½ tsp ginger paste
20-25 Cashewnuts (soak in warm water for 10mts.) & grind to fine paste
50 grams butter/ghee
2 tablespoon coconut powder
½ tsp chilly powder
½ tsp garam masala powder
½ tsp turmeric powder
1½ - 2cups water
Salt to taste

Directions:
Heat butter in a kadai saute ginger and garlic paste and ground onion for a couple of minutes. Add green chillies, tomatoes, turmeric, garam masala, chilli powder and saute till the tomatoes are cooked. Add cashew nut & coconut powder and water, stir well. Add salt to taste. When it begins to boil, add the vegetables Cook on slow fire for 3 - 5 minutes. Serve hot.
